Three weeks toooooo late. . .

Happy Monday!!! How have I let 3 weeks go by with no recipes and running updates for you guys?!!! Its been a wild couple of weeks. We left Charlotte in a hurry to be with family for a few days to celebrate our Uncle’s life. It was definitely a bittersweet time. And its times like these that we are reminded to love big, don’t hold grudges, forgive quickly, make time for others, be spontaneous, cook a meal for someone, be humble and kind.

I am a believer that you do not to have to have 5 hours a day to work out. Sometimes all I have is 20 minutes. But you know what you can accomplish if you just have a few minutes, a lot. So the next time you are short on time and think that its not worth getting a little exercise in, think again! Twenty minutes walking, running, jump roping or whatever you choose is better than nothing! For me, 2 miles is better than no miles. The other thing I started doing is however many miles I run, I do that many jump ropes! So 2 miles=200 jump ropes, 4 miles=400 jump ropes!!!

And all of a sudden all I wanted to do was bake!! I LOVE to bake! At my old office I baked EVERY Friday!! Talk about a company that was spoiled! Now when I want to bake and keep it in the house I look for cleaner recipes. Here are a few I tried out!

I love muffins but I hate all the junk in them so I had some blueberries and zucchini I needed to use up. Instead of throwing it all away I put it all to good use! Almond Butter, blueberry, zucchini muffs

And I love keeping these little home-made Lara balls in the fridge. FIVE ingredients and great for a quick snack! Lara balls

Here are 2 food items you can make ahead of time and have for the week: Egg muffins, perfect for quick mornings when you have to get out of the house. Now that school is back in session these are awesome for the morning! I do a batch and have them in the fridge. You can re-heat them quickly or eat them at room temperature. And you can add whatever you want to them. These are all veggie and the outside is leftover ham I needed to use up. And broccoli fried rice. I love this dish because you can pair anything with it.

And in celebration of my 34th, SHHHHHH don’t tell anyone that is how old I turned, we have been eating cake allll week and weekend long!!! I rarely use box mixes but when I need to I will and this one is SOOO good!

And we got to enjoy a date night at the Panthers Stadium!!! Always make time for you and your spouse! Its so important. It doesn’t have to cost a dime but just make sure its time together, cell phones put away and give each other a few minutes of your day! And I have a crazy, awesome boss who gave us these tickets!!!!! You know you have amazing seats when you can see the sweat dripping off these players faces!

    I honestly don’t think there is a single thing better than funfetti cake for birthday’s!! I would LOVE to try to gluten free version but I haven’t been able to find it where I live. Do you have any recommendations on places to look? Did you use a canned frosting or homemade??

      Hi Lindsay! I found this at Harris Teeter but I bet you could amazon prime it if you can’t find it at the local grocery! And for this cake I did use a can of frosting, again something I rarely do!! There is nothing like a batch of home-made frosting.
