No bread, No worries!

If you tell me you hate bread, then you are a liar!! Don’t we all love it to a certain extent? Even as healthy as I eat, I love a good sandwich every now and then and guess what, you can have it. What I like to look for in bread is a few things: high fiber, few ingredients and filled with nutrients. Being gluten free, I have no choice but to eat GF bread and let me tell you, GF bread has come a long way over the past 20 years! This is my favorite brand BUT Costco does not carry it anymore. But its the best whether toasted or cold, if you see it, pick up a loaf and let me know what you think! https://promiseglutenfree.shop/

And if you rather stay bread free, make your sandwich on plain rice cakes or fill peppers!

Fresh salmon and tuna, right rice and spinach. If you are in or around Harrisburg, NC stop and see the seafood man:

And shrimp tacos were a hit BUT the avocado sauce MADE them. Not sure what to do with your ready to eat avocados?! Make this and serve it with your shrimp tacos. Honestly, the crema would be delicious on pretty much anything! And I made it dairy free https://girlwiththeironcast.com/spicy-shrimp-tacos-avocado-crema/

And let me share a delicious biscuit recipe with you because lets me honest, we all need a biscuit every now and then! These will keep for a week but make sure you put them in the fridge. Made with dairy free sour cream and they were so moist and not crumbly https://healthyrecipesblogs.com/almond-flour-biscuits/#recipe

And sweets are a must every once in a while and let me say I have tried a few different kinds of dairy free chocolate and they are just ok, this will blow you away! These ingredients made the best chocolate!

Are you a smoothie type of person? After a hard work out I would rather drink a smoothie and I have been stuck on this one: frozen riced cauliflower, spinach, half of frozen banana, 2 dates, PB 2 powder, cocoa powder and almond milk. Blend it all up and sip away! SOMETIMES I will add a shot of espresso!!!!

You don’t need fancy gym equipment to get the job done!

And just having fun with Charcuterie!

Happy 4th of July week! As we go into this weekend, lets all be a little more thankful for the Country we live in! Enjoy this time as you celebrate and be safe!

Ciao!

Road Trip Snacks!

Are you a snacker when traveling? I try to always pack super healthy options so I don’t feel awful when traveling. My best friend and I just drove to Tennessee, we left at night, so around dinner time and I decided to take my dinner with me. . . Roasted broccoli and Brussels sprouts! What are some of your favorite road trip snacks? And coffee is always a must!

I am going to give blood again with https://www.redcross.org/ so I have been upping my iron with some of my favorite foods and smoothies! This one is frozen riced cauliflower, 1/2 frozen banana, spinach, 2 dates, PB 2 powder, cinnamon and almond milk. And when your so hungry you can’t even get a plate so you eat out of the pan, yes that is a full bag of spinach!

And I have yet to to answer this question but why does food taste better when assembled in a bowl?!? Fajita bowls are one of my favorites! Build from the bottom up and I started mine with https://rightrice.com/ added chicken and roasted veggies and topped with avocado and dairy free sour cream!

And while my Hubby works so hard on his CPA, I am just trying to keep myself out of trouble! Anyone else in a super busy season of life? My hubs is so dedicated and working so hard, just wait until its all over and those 3 little, powerful letters follow his last name! We can’t wait!!! Continue to cheer him on with me!

Most importantly, make food fun! Fruit is another great option for a BBQ! I added this dip https://www.cookingclassy.com/nutella-cheesecake-dip/#jump-to-recipe

Until next time! Ciao!
